Honey Joy Caramel Slice
Method
Makes: 1 x rectangle 20 cm x 30 cm slice. Total Prep time: 15 mins + refrigeration
Base
- Preheat oven to 180°C (fan-forced). Butter a 20 cm x 30 cm slice tin and line with baking paper.
- Mix flour, cocoa, coconut, butter and brown sugar in a bowl until well combined. Press mixture firmly and evenly into the prepared tin to create the base. Bake for 20 minutes.
Honey Joy Topping
- Place butter, honey and caster sugar in a small saucepan over low heat. Stir until the butter has melted and the mixture is smooth.
- Place the corn flakes in a large bowl and pour over the honey mixture. Gently stir until the corn flakes are evenly coated. Set aside to make the caramel.
Caramel Filling
- Place butter, sweetened condensed milk, vanilla and golden syrup in a medium saucepan over medium heat. Cook, whisking frequently, for 5–7 minutes, or until the mixture has thickened slightly.
- Evenly pour the caramel filling over the cooked base. Return to the oven and bake for 5 minutes.
- Remove from the oven and evenly spread the honey joy topping over the caramel layer. Return the slice to the oven and bake for a further 8–10 minutes.
- Remove from the oven and allow to cool in the tin. Transfer to the refrigerator to set for at least 3 hours before slicing for serving.
