Brown Butter Chocolate Chunk Cookies
Method
- Preheat the oven to 180°C (fan-forced). Line 2 baking trays with baking paper.
- In a medium saucepan melt the butter. Continue cooking, stirring often, until the butter turns foamy and golden brown (3–4 minutes). Measure 110 g into a bowl and leave to cool for 15 – 20 minutes.
- Mix the brown and white sugars into the cooled butter until well combined. Add the egg and whisk for 1–2 minutes, or until the mixture becomes slightly pale and thick. Stir in the vanilla.
- Add the flour, baking powder, bi-carb soda and salt. Fold together with a spatula until the dough is mostly combined. Add the chopped dark chocolate and continue folding until evenly mixed through.
- Scoop the dough into 12 portions and place 6 portions onto each prepared tray, allowing room for spreading.
- Bake for 12 – 15 minutes, or until the edges are set and the centres are still slightly soft. Remove from the oven and tap the tray firmly on the bench to help the cookies settle.
- Sprinkle with flaky sea salt and leave the cookies to cool on the tray for 10 minutes before transferring to a wire rack to cool completely.
