Air Fryer Banana Bread Muffins
Method
- Combine 1 cup mashed banana, butter, eggs, vanilla and brown sugar in a large bowl with a whisk. Sift flour and cinnamon over the top and stir with whisk until smooth.
- Place enough paper muffin cases in air fryer basket that can fit, 1cm apart (see tip). Spoon mixture evenly into paper cases until ¾ full. Air fry on 160°C for 12 - 15 minutes or until cooked through when pierced with a skewer.
- Remove pan and basket and allow to cool for a few minutes before carefully lifting out of basket and placing on a wire rack to cool. Cook remaining muffins the same way. Dust with icing sugar to serve. Serve with Western Star Spreadable.
More Tips
- For stability in the air fryer we used paper cases that had a foil outer casing. Available in supermarkets.
- To make in the oven; line a standard muffin pan with 10 paper muffin cases. Spoon mixture evenly into cases and cook in a 170°C preheated oven for 20 - 25 minutes until golden.
