Apple & Strawberry Cake
Method
- Preheat oven to 170°C fan forced. Grease and line the base and sides of a 22cm round springform pan with butter and baking paper.
- Place butter and sugar in the bowl of an electric mixer and beat until pale and creamy. Add eggs, one at a time, beating until combined between each addition.
- Stir in sifted flour and buttermilk, in two batches, until combined. Stir in strawberries.
- Spread cake mixture into prepared pan. Smooth top. Overlap apple slices around the edge, brush with some of the melted butter.
- Bake for about 1 hour or until cooked when tested with a skewer. Brush with more melted butter and drizzle with honey whilst hot. Allow to cool for 30 minutes before removing from pan.
- Cut into wedges and serve drizzled with more honey. Serve with whipped cream.

- This cake freezes well. Freeze in portions and defrost in fridge.
- You can add frozen blueberries instead of strawberries
