Method
Cheesecake Batter
- Preheat the oven to 180°C (fan-forced). Butter a 20cm square baking tin and line with baking paper.
- Using a hand or stand mixer, beat the cream cheese until smooth. Add the sugar and vanilla and continue mixing until the mixture is glossy. Add the egg and mix until fully incorporated, then stir in the sour cream. Set aside.
Brownie Batter
- In a small saucepan melt the chocolate and butter until smooth. Alternatively, melt in the microwave in 30 second bursts, stirring between. Set aside to cool.
- Whisk together eggs, sugar, vanilla and salt in a large bowl, until pale and thick. Pour in the chocolate mixture and mix until combined.
- Sift the flour and cocoa powder over the surface, then fold through until the batter is smooth and evenly mixed.
Assembly
- Remove ⅓ cup brownie mixture and set aside. Pour the remaining brownie batter into the prepared tin.
- Gently spoon and spread the cheesecake mixture over the brownie base. Add small dollops of the reserved brownie mixture on top, then lightly swirl with a knife to create a marbled effect.
- Bake for 15 minutes, then reduce oven temperature to 160°C and bake for a further 15 minutes, or until the cheesecake layer is just set in the centre and lightly golden around the edges.
- Remove from the oven and allow to cool completely in the tin on a wire rack, then transfer to the refrigerator. Refrigerate for at least 1 hour before slicing.
