Method
- Whisk the eggs and milk in a jug with a fork.
- Place the butter in a non-stick fry pan (base measurement 20cm) over a medium heat. Once the butter has melted, pour in the egg mixture, and tilt the pan slightly to cover the base with egg mixture.
- Cook for about 2 to minutes or until the egg is starting to set on top but remains slightly runny. Sprinkle over some of the chives. Place the ham on half of the omelette and sprinkle with cheese and more chives.
- Use a heatproof rubber spatula to run around edges and underneath omelette to loosen then fold over filling and slide onto a plate.
- 5. Serve the omelette immediately sprinkled with remaining chives with roasted tomatoes and spinach leaves.
More Tips
- If there is a lot of uncooked egg on top, use your spatula to gently spread some of it to the edges.
- Roast or pan fry some cherry tomatoes on the vine until beginning to blister to serve with omelette.
- Try using other filling ingredients like chopped tomatoes, mushrooms, cooked chopped bacon or roasted capsicum strips!
