Zucchini & Bacon Slice
Method
- Preheat the oven to 180°C. Grease a non-stick lamington tin and set aside.
- Melt the butter in a medium fry pan over a medium heat. Once melted, add the onion and bacon, and cook for 4-5 minutes or until the onion softens and the bacon starts to turn golden. Transfer from the pan into a medium bowl to cool.
- Pace the zucchini, cheese, flour, and eggs in a large bowl. Add the cooled onion and bacon mixture, season well with salt and pepper, and stir to combine all ingredients.
- Pour the mixture into the prepared tin, transfer into the oven, and cook for 30 minutes or until puffed and golden. Remove from the oven and allow to cool for 5 minutes.
- Cut the slice into squares and serve warm or at room temperature.
